Filling Preparation

    Sauté the Onions

    In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

    Add Spinach and Garlic

    Add the minced garlic and fresh spinach to the skillet. Cook until the spinach is wilted, about 3-4 minutes. Season with salt and black pepper. Remove from heat and let cool.

    Mix the Filling

    In a mixing bowl, combine the cooled spinach mixture with cream cheese, crumbled feta cheese, and the beaten egg. Mix until well combined.

Assembling the Spanakopita

    Prepare the Filo Dough

    Preheat your oven to 180°C (350°F). Lay out the filo dough sheets and cover them with a damp cloth to prevent drying out. Brush a baking dish with melted butter.

    Layer the Filo Dough

    Place one sheet of filo dough in the baking dish and brush with melted butter. Repeat this process with 4-5 sheets, layering and buttering each one.

    Add the Filling

    Spread the spinach filling evenly over the layered filo dough.

    Top with More Filo

    Continue layering the remaining filo sheets on top of the filling, brushing each sheet with melted butter. Finish with a few layers on top.

    Bake the Spanakopita

    Using a sharp knife, score the top layer of the pastry into squares (to help with cutting after baking). Bake in the preheated oven for 30-40 minutes or until golden brown.

    Cool and Serve

    Once baked, remove from the oven and let cool for a few minutes before slicing. Serve warm or at room temperature.
