Method

Preparing the Demi Glace

    Make the Base

    In a medium saucepan, combine the beef stock, red wine, shallots, bay leaf, and thyme. Bring the mixture to a boil over medium-high heat.

    Reduce the Sauce

    Once boiling, reduce the heat to medium-low and let it simmer uncovered for about 30-40 minutes or until the liquid has reduced by half.

    Finish the Sauce

    Remove the bay leaf and strain the sauce into a clean saucepan. Return to low heat and stir in butter until melted and the sauce is glossy. Season with salt and pepper to taste.

Cooking the Sirloin

    Prepare the Steak

    Remove the sirloin steak from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps it cook evenly.

    Season the Steak

    Generously season both sides of the sirloin with salt and black pepper.

    Cook the Steak

    In a cast-iron skillet or heavy pan, heat a tablespoon of oil over medium-high heat until shimmering. Add the sirloin and sear for about 4-5 minutes on each side for medium-rare, or longer if desired.

    Rest the Steak

    Remove the steak from the skillet and let it rest on a cutting board for at least 5 minutes before slicing.

    Serve with Demi Glace

    Slice the sirloin against the grain and serve topped with the prepared demi glace.
