Prep the Shrimp
Peel and devein the shrimp if not already prepared. Rinse under cold water and pat dry with paper towels.

Make the Sauce
In a saucepan over medium heat, add the minced garlic and sauté for about 1 minute until fragrant. Add the heavy cream, Dijon mustard, salt, and black pepper. Stir well and let the mixture simmer for about 5 minutes until slightly thickened.

Cook the Shrimp
In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the shrimp and cook for about 2-3 minutes on each side until they turn pink and are cooked through. Remove from heat and set aside.

Combine and Bake
Preheat your oven to 375°F (190°C). In a baking dish, combine the cooked shrimp with the Dijon cream sauce, and mix in half of the Gruyere and Parmesan cheeses. Top with breadcrumbs and the remaining cheeses. Bake for 20-25 minutes until bubbly and golden brown.

Serve with Crostini
Remove the dish from the oven and let it cool for a few minutes. Serve warm with crostini on the side for dipping.
