Garlic Confit Preparation

    Prepare the Garlic Confit

    Peel the garlic cloves and place them in a small saucepan. Pour in the olive oil until the garlic is submerged. Add the rosemary sprigs to the oil.

    Cook the Garlic

    Heat the saucepan over low heat, allowing the garlic to simmer gently for about 30-40 minutes, or until the cloves are tender and lightly golden. Stir occasionally to ensure even cooking.

    Cool and Store

    Once cooked, remove from heat and let cool. Store the garlic confit in a jar, including the oil and rosemary, and set aside for use.

Main Dish Preparation

    Cook the Sausage

    In a large skillet, over medium heat, add the Italian sausage. Cook until browned and cooked through, breaking it apart with a wooden spoon, about 8-10 minutes.

    Add Garlic Confit

    Once the sausage is cooked, add 5-6 cloves of the garlic confit (reserve the rest for later use) and mix well. Cook for an additional 2-3 minutes.

    Season the Mixture

    Sprinkle in the fresh rosemary, salt, and black pepper. Stir to combine and cook for another minute.

    Add Mozzarella

    Tear the fresh mozzarella into pieces and add it to the skillet. Stir gently until the cheese starts to melt, about 2-3 minutes.

    Remove from heat and serve hot, garnishing with additional fresh rosemary if desired.
