Clean Oysters
Rinse the James River oysters under cold running water to remove any dirt or sand. Scrub the shells with a brush to ensure they are clean.

Sauté Spinach
In the same skillet with the bacon fat, add the fresh spinach and sauté until wilted, about 2-3 minutes. Remove from heat and set aside.

Preheat Oven
Preheat your oven to 400°F (200°C).

Assemble Oysters
Place the cleaned oysters on a baking tray. Spoon a small amount of sautéed spinach on each oyster, followed by crumbled bacon, and then top with a generous spoonful of béchamel sauce.

Add Breadcrumbs
Sprinkle breadcrumbs evenly over the top of each oyster to create a crunchy topping.

Bake Oysters
Place the baking tray in the preheated oven and bake for about 10-12 minutes, or until the oysters are heated through and the breadcrumbs are golden brown.
