    Wash all the vegetables thoroughly under cold water. Cut the bell pepper, eggplant, onion, squash, and zucchini into bite-sized pieces (approximately 1-inch cubes).

    Soak Wooden Skewers

    If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

Marinade

    In a mixing bowl, combine the olive oil, balsamic vinegar, minced garlic cloves, dried oregano, salt, and black pepper. Whisk until well combined.

    Add the chopped vegetables to the marinade and toss to coat evenly. Allow them to marinate for at least 15 minutes to absorb the flavors.

Skewering

    Thread the marinated vegetables onto the soaked wooden skewers, alternating between different vegetables for a colorful presentation. Fill each skewer with 4-5 pieces.
