Method
Cake
- 1
Prepare the oven and cake pans
Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- 2
Mix dry ingredients
In a large mixing bowl, sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- 3
- 4
Incorporate boiling water
Stir in the boiling water until fully combined. The batter will be thin.
- 5
Bake the cakes
Pour the batter evenly into the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- 6
Cool the cakes
Remove from the oven, let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
Raspberry Layer
- 7
Prepare the raspberries
In a medium bowl, combine the fresh raspberries, granulated sugar, and lemon juice. Gently toss to coat the raspberries and set aside for about 10 minutes to macerate.
Chocolate Ganache
- 8
Heat the cream
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer, then remove from heat.
- 9
Melt the chocolate
Place the semi-sweet chocolate chips in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for about 5 minutes.
- 10
Whisk until smooth
After 5 minutes, whisk the mixture until the chocolate is completely melted and the ganache is smooth.
Assembly
- 11
Layer the cake
Once the cakes have cooled, place one layer on a serving platter. Spread half of the macerated raspberries over the top of the first layer.
- 12
Add ganache
Pour half of the chocolate ganache over the raspberries, allowing it to drizzle down the sides.
- 13
Complete the cake
Place the second layer of cake on top and repeat the process with the remaining raspberries and ganache.
- 14
Final touch
Drizzle any remaining ganache on top and decorate with extra fresh raspberries if desired.
