Preparing the Chicken

Preheat the Oven
Preheat your oven to 400°F (200°C).

Season the Chicken
Season the free range chicken breast with salt and black pepper on both sides.

Bread the Chicken
In a shallow dish, combine breadcrumbs and grated Parmesan cheese. Dredge the seasoned chicken breast in the breadcrumb mixture, ensuring it is fully coated.

Sear the Chicken
In an oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the breaded chicken breast and sear for 3-4 minutes on each side until golden brown.

Add Prosciutto and Sage
Top the seared chicken with prosciutto slices and fresh sage leaves.

Transfer the skillet to the preheated oven and roast for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
Preparing the White Wine Cream Sauce

Deglaze with Wine
Pour in the white wine, scraping the bottom of the saucepan to release any browned bits. Allow the wine to simmer for 5 minutes.

Stir in the heavy cream, salt, and black pepper. Simmer for another 5-7 minutes until the sauce has thickened slightly.
