Dough Preparation

    Mix Dough Ingredients

    In a large mixing bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until foamy. Add olive oil, salt, and flour gradually while mixing until a dough begins to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.

    Make the Sauce

    In a saucepan, heat the extra virgin olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute). Add canned San Marzano tomatoes, salt, sugar, and dried oregano. Cook for 15-20 minutes, stirring occasionally until thickened. Remove from heat and let cool.

Assembly and Baking

    Preheat Oven

    Preheat your oven to its highest setting (usually around 250°C or 482°F). If using a pizza stone, place it in the oven to heat as well.

    Shape the Dough

    Once the dough has risen, punch it down and transfer it to a floured surface. Divide it into two equal parts and shape each into a ball. Using your hands or a rolling pin, stretch each ball into a 10-12 inch round.

    Top the Pizza

    Spread a thin layer of the prepared red sauce over the dough, leaving a small border around the edges. Arrange slices of fresh mozzarella cheese on top and sprinkle with fresh basil leaves. Drizzle with olive oil.

    Carefully transfer the pizza to the preheated oven (or onto the hot pizza stone). Bake for 8-10 minutes or until the crust is golden and the cheese is bubbling and slightly browned. Remove from the oven and let cool for a minute.
