Method

Burger Patty

  1. 1

    Prepare the Lamb Patty

In a large bowl, combine the ground lamb, minced garlic, chopped rosemary, salt, and black pepper. Mix until just combined.

  2. 2

    Form the Patties

Shape the mixture into two equal patties, making a slight indentation in the center of each to prevent puffing while cooking.

Caramelized Onions

  1. 3

    Cook the Onions

In a skillet, heat the olive oil over medium heat. Add the sliced onion and cook, stirring occasionally, until golden brown and caramelized, about 15-20 minutes.

  2. 4

    Add Balsamic Vinegar

Add balsamic vinegar to the onions and stir to combine. Cook for an additional 2-3 minutes, then remove from heat.

Tomato Jam

  1. 5

    Cook the Tomatoes

In a saucepan, combine chopped tomatoes, sugar, red wine vinegar, and salt. Cook over medium heat, stirring occasionally, until the tomatoes break down and the mixture thickens, about 20-25 minutes.

  2. 6

    Finish the Jam

Stir in the chopped basil and cook for an additional 2 minutes. Remove from heat and let cool.

Burger Assembly

  1. 7

    Cook the Patties

Grill or pan-fry the lamb patties over medium-high heat for about 4-5 minutes on each side or until they reach desired doneness.

  2. 8

    Assemble the Burgers

Toast the brioche buns lightly. On the bottom half of each bun, layer the arugula, the lamb patty, crumbled goat cheese, caramelized onions, and a generous spoonful of tomato jam. Top with the other half of the bun.

  3. 9

    Serve

Serve the lamb burgers warm with your favorite side dishes.
