Oysters

Ice Bed

Method

Preparation

  1. 1

    Clean the Oysters

Rinse the fresh James River oysters under cold running water to remove any sand or debris. Use a stiff brush if necessary.

  2. 2

    Prepare the Ice Bed

In a large bowl or platter, spread the crushed ice evenly to create a bed for the oysters.

  3. 3

    Shuck the Oysters

Using an oyster knife, carefully shuck the oysters by inserting the knife into the hinge of the shell and twisting to open. Ensure to keep the oyster's liquid (liquor) in the shell.

  4. 4

    Arrange the Oysters

Place the shucked oysters on the ice bed, ensuring they are stable and won't tip over.

Serving

  1. 5

    Garnish and Serve

Serve the oysters chilled on the ice bed, accompanied by lemon wedges, a small bowl of freshly grated horseradish, and hot sauce for drizzling.
