Method

Preparation

  1. 1

    Prepare the Salmon

Preheat your grill to medium-high heat. Pat the salmon fillets dry with a paper towel. In a small bowl, mix the olive oil, salt, black pepper, and lemon juice. Brush this mixture over the salmon fillets.

  2. 2

    Prepare the Vegetables

Wash and cut the asparagus into 2-inch pieces. Slice the zucchini and red bell pepper into strips. In a bowl, toss the vegetables with olive oil, salt, and black pepper.

  3. 3

    Prepare the Lemon Butter Sauce

In a small saucepan over medium heat, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant. Stir in lemon juice and fresh parsley, and season with a pinch of salt. Remove from heat and set aside.

Grilling

  1. 4

    Grill the Salmon

Place the salmon fillets on the grill, skin side down. Grill for about 6-8 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

  2. 5

    Grill the Vegetables

On a separate grill pan, add the seasoned vegetables. Grill for about 5-7 minutes, turning occasionally until they are tender and slightly charred.

Serving

  1. 6

    Plate the Dish

Once cooked, carefully remove the salmon and vegetables from the grill. Place the salmon fillets on a serving plate, and arrange the grilled vegetables alongside. Drizzle the lemon butter sauce over the salmon and serve immediately.
