Prepare Black Bean Patties

    Mash the Beans

    In a large bowl, mash the canned black beans with a fork until mostly smooth, leaving some chunks for texture.

    Mix Ingredients

    Add the breadcrumbs, chopped onion, minced garlic, cumin, paprika, salt, black pepper, and olive oil to the mashed black beans. Mix until well combined.

    Form Patties

    Shape the mixture into 4 equal-sized patties, about 1/2 inch thick.

    Cook Patties

    In a skillet over medium heat, add a little olive oil and cook the patties for about 5-6 minutes on each side until they are golden brown and heated through.

Assemble the Burger

    Toast the Buns

    While the patties are cooking, lightly toast the brioche buns in a separate skillet or toaster until golden brown.

    Add Toppings

    Once the patties are cooked, place each patty on the bottom half of a toasted brioche bun. Top with sliced smoked gouda, avocado slices, and a generous handful of arugula.
