Balsamic Marinated Tomatoes

Prepare the Tomatoes
Dice the Roma tomatoes into small pieces and place them in a mixing bowl.

Marinate the Tomatoes
Add balsamic vinegar, olive oil, minced garlic, salt, and black pepper to the diced tomatoes. Mix well to combine and let the mixture marinate for at least 30 minutes.
Crostini

Prepare the Baguette
Preheat the oven to 400°F (200°C). Slice the baguette diagonally into 1/2-inch thick slices.

Toast the Crostini
Place the baguette slices on a baking sheet, brush one side with olive oil, and toast in the preheated oven for 10-12 minutes or until golden brown.
Assemble the Bruschetta

Add Toppings
Slice the fresh mozzarella into rounds. Once the crostini is toasted, place a slice of mozzarella on each piece.

Top with Marinated Tomatoes
Spoon the marinated tomato mixture over the mozzarella on each crostini.

Garnish with Basil
Tear fresh basil leaves and sprinkle them over the bruschetta. Drizzle with green oil if desired.
