Preparation

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare Vegetables

    Wash and chop the wild mushrooms, red peppers, squash, broccoli, and red onions into bite-sized pieces.

    Sauté Vegetables

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the mushrooms, red peppers, squash, broccoli, and red onions. Sauté for about 5-7 minutes or until the vegetables are tender.

    Mix Sauces

    In a bowl, combine the red sauce and pesto, stirring until well blended.

Assembly

    Layer Ingredients

    In a baking dish, spread half of the mixed sauce on the bottom. Layer half of the sautéed vegetables over the sauce.

    Add Cheese

    Crumble half of the goat cheese and sprinkle half of the mozzarella over the vegetables.

    Repeat Layers

    Repeat the layering process with the remaining sauce, vegetables, and cheeses.

Baking

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.

    Garnish

    Once out of the oven, sprinkle the fresh basil on top before serving.
