    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well until all the dry ingredients are evenly distributed.

    Soak the Calamari

    Pour the buttermilk into a separate bowl. Add the calamari rings, ensuring they are fully submerged. Allow them to soak for at least 30 minutes in the refrigerator. This tenderizes the calamari.

    In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the coating mixture into it; it should sizzle immediately.

    Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the calamari rings in the coating mixture, ensuring they are well coated.

    In a medium bowl, mix together the mayonnaise, minced garlic, sriracha sauce, lemon juice, and salt until well combined.
