    Prepare the Crab Cake Mixture

    In a large bowl, gently combine the fresh snow crab meat, bread crumbs, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, chopped green onions, beaten egg, salt, and black pepper. Mix until just combined, being careful not to break up the crab meat too much.

    Chill the Mixture

    Cover the bowl with plastic wrap and refrigerate the crab mixture for at least 30 minutes. This helps the cakes hold together better when cooking.

    Form the Crab Cakes

    Once chilled, use your hands to form the mixture into small patties, about 2-3 inches in diameter. Place the formed cakes on a baking sheet lined with parchment paper.

Cooking the Crab Cakes

    Heat the Pan

    In a large skillet, heat 2-3 tablespoons of oil over medium heat. Make sure the oil is hot but not smoking.

    In a small bowl, mix together the mayonnaise, minced chipotle peppers, lime juice, minced garlic, and salt. Adjust salt to taste. Mix until smooth and well combined.
