Filling Preparation

    Cook the Chicken Filling

    In a large pan, heat 2 tablespoons of oil over medium heat. Add chopped onions and sauté until they become translucent.

    Add minced garlic and grated ginger to the pan, stirring for about 1 minute until fragrant.

    Add the ground chicken to the pan, breaking it up with a spoon. Cook for about 5-7 minutes until the chicken is fully cooked.

    Sprinkle in curry powder, salt, and black pepper, mixing well to combine. Stir in the chopped coriander and cook for an additional 2 minutes.

    Remove from heat and let the mixture cool while you prepare the filo dough.

Samosa Assembly

    Prepare the Filo Dough

    Preheat your oven to 180°C (350°F). Lay out the filo dough sheets on a clean surface. Brush each sheet lightly with melted butter or oil.

    Layer 2-3 sheets of filo dough together, brushing each layer with butter or oil to keep them moist.

    Cut the layered filo dough sheets into strips about 10 cm wide.

    Place a spoonful of the chicken filling at one end of each strip and fold the corner of the dough over the filling to form a triangle.

    Continue folding the triangle along the strip until you reach the end. Seal the edge with a little melted butter or oil.

Baking

    Bake the Samosas

    Place the assembled samosas on a baking tray lined with parchment paper. Brush the tops with additional melted butter or oil.

    Bake in the preheated oven for about 25-30 minutes or until golden brown and crispy.

    Remove from the oven and let cool slightly before serving.
