Prepare the Shrimp
In a bowl, toss the shrimp with Cajun seasoning until evenly coated. Let marinate for 15 minutes.

Cook the Bacon
In a large skillet over medium heat, cook the applewood smoked bacon until crispy. Remove from skillet and drain on paper towels. Reserve the bacon fat in the skillet.

Sauté the Red Peppers
In the same skillet with bacon fat, add the diced red bell pepper and sauté for about 5 minutes until soft. Remove from skillet and set aside.

Cook the Shrimp
In the same skillet over medium-high heat, add the marinated shrimp and cook for 2-3 minutes per side until they are blackened and cooked through. Remove from heat.

Combine Ingredients
In a large mixing bowl, combine the sautéed red peppers, cooked shrimp, and crumbled bacon. Mix well.

Assemble the Dish
In a serving dish, spread the red sauce at the bottom. Layer the shrimp, bacon, and pepper mixture on top. Add mozzarella cheese on top and drizzle with chipotle aioli.
