Method
Cake
- 1
Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- 2
Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
- 3
Cream Butter and Sugar
In another bowl, beat the softened butter until creamy. Gradually add the granulated sugar, beating until light and fluffy.
- 4
Add Eggs and Vanilla
Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
- 5
Combine Wet and Dry Ingredients
Gradually add the dry mixture to the wet mixture, alternating with milk. Mix until just combined.
- 6
Fold in Blackberries
Gently fold in the fresh blackberries, being careful not to crush them.
- 7
Bake the Cake
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- 8
Cool the Cake
Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Lemon Curd
- 9
Prepare Lemon Curd
In a medium saucepan, whisk together the fresh lemon juice, granulated sugar, and eggs until well blended.
- 10
Cook the Mixture
Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and coats the back of a spoon, about 10 minutes.
- 11
Add Butter and Zest
Remove from heat, and stir in the butter and lemon zest until fully combined. Let cool before using.
Vanilla Buttercream
- 12
Beat Butter
In a large bowl, beat the softened butter with an electric mixer until creamy.
- 13
Add Sugar and Vanilla
Gradually add the powdered sugar, mixing on low speed until combined. Then add the vanilla extract.
- 14
Adjust Consistency
Add milk, one tablespoon at a time, until the desired spreadable consistency is reached.
Assemble the Cake
- 15
Layer the Cake
Once the cakes are cool, place one layer on a serving plate. Spread a layer of lemon curd on top.
- 16
Add Second Layer
Place the second cake layer on top of the first and spread buttercream frosting evenly over the top and sides of the cake.
- 17
Garnish
Top with additional blackberries for decoration, if desired.
