Crostini Preparation

    Slice the Baguette

    Cut the baguette into 1/2 inch thick slices.

    Brush with Olive Oil

    Place the baguette slices on a baking sheet and brush each side lightly with olive oil.

    Toast the Crostini

    Preheat the oven to 400°F (200°C). Toast the baguette slices in the oven for about 5-7 minutes or until golden brown, flipping halfway through.

    Caramelize the Onions

    Peel and slice the onions thinly. In a skillet, add a bit of olive oil over medium heat. Add the onions and cook, stirring occasionally, for about 15-20 minutes until they become soft and caramelized.

    Thinly slice the roast beef against the grain.

    Assemble the Bruschetta

    On each toasted crostini, layer a slice of roast beef, a slice of gouda cheese, a spoonful of caramelized onions, and drizzle with ranch dressing and demi-glace.
