Prepare the Shrimp
Rinse the tail-on shrimp under cold water and pat them dry with paper towels. Make sure they are deveined and cleaned.

Prepare the Bacon
Cut each slice of applewood smoked bacon in half. This will allow you to wrap each shrimp with a half slice of bacon.

Make the Mango Coulis
In a blender, combine the ripe mango, honey, lime juice, and a pinch of salt. Blend until smooth. Adjust the sweetness and acidity to taste, if necessary.

Wrap the Shrimp
Take each shrimp and wrap it with a half slice of bacon, securing it in place by threading a toothpick through the bacon and shrimp.

Preheat the Grill
Preheat your grill to medium-high heat. If using an oven, preheat it to 400°F (200°C).

Cook the Bacon-Wrapped Shrimp
Place the wrapped shrimp on the grill or a baking sheet if using the oven. Grill or bake for about 5-7 minutes on each side, or until the bacon is crispy and the shrimp are cooked through and opaque.

Remove the shrimp from the grill or oven and let them rest for a minute. Arrange them on a serving platter.
