Preparation

  1. 1

    Cook the Bacon

In a large skillet over medium heat, cook the applewood smoked bacon until crispy, about 5-7 minutes. Remove the bacon and place it on paper towels to drain.

  2. 2

    Cook the Chicken

In the same skillet, remove excess bacon grease leaving about 1 tablespoon. Add the chicken breasts and season with salt and pepper. Cook for about 6-7 minutes per side until golden brown and cooked through. Remove and let rest for a few minutes, then slice into strips.

  3. 3

    Cook the Tortellini

In a large pot, bring salted water to a boil. Add cheese tortellini and cook according to package instructions until al dente, usually around 3-5 minutes. Drain and set aside.

Assembly

  1. 4

    Combine Ingredients

In a large mixing bowl, combine the cooked tortellini, sliced chicken, crispy bacon (crumbled), and fresh spinach. Pour in the alfredo sauce and toss gently to combine until everything is well coated.

  2. 5

    Serve

Serve immediately, garnished with fresh basil and additional parmesan cheese if desired.
