Chipotle Barbecue Sauce

Prepare the Sauce
In a small saucepan, combine the chipotle peppers, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Cook over medium heat for 10 minutes, stirring occasionally, until well blended and heated through. Remove from heat and set aside.

Season the Pork
In a bowl, mix together salt, black pepper, garlic powder, onion powder, and cumin. Rub this spice mixture all over the pork shoulder.

Cook the Pork
Heat olive oil in a large skillet over medium-high heat. Sear the pork shoulder on all sides until browned, about 3-4 minutes per side. Transfer the pork to a slow cooker.

Add Sauce and Cook
Pour half of the prepared chipotle barbecue sauce over the pork in the slow cooker. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix with the remaining barbecue sauce. Cook for an additional 30 minutes on low.

Preheat your oven to 350°F (175°C).

Layer the Ingredients
In a baking dish, layer the shredded pulled pork evenly on the bottom. Sprinkle the mozzarella and cheddar cheese on top of the pork.

Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
