Prepare the Asparagus
Trim the woody ends off the asparagus and cut them into 2-inch pieces. Bring a pot of salted water to a boil, then blanch the asparagus pieces for about 2-3 minutes until bright green and tender-crisp. Drain and transfer to an ice bath to stop the cooking process. Once cooled, drain again and set aside.

Prepare the Salad Ingredients
In a large salad bowl, combine the baby mixed greens, sliced red onion (thinly sliced), diced tomatoes, and cooled asparagus pieces. Toss gently to mix the ingredients evenly.

Add Candied Walnuts and Gorgonzola
Sprinkle the candied walnuts and crumbled gorgonzola cheese over the salad mixture. Toss gently to combine without breaking the cheese.
Dijon Dressing Preparation

Mix the Dressing
In a small bowl or jar, combine the dijon mustard, olive oil, red wine vinegar, honey, salt, and black pepper. Whisk or shake until the dressing is well combined and emulsified.

Drizzle the dijon dressing over the salad just before serving. Toss gently to ensure all ingredients are coated with the dressing.
