Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

Cook the Spinach
Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

Mix the Filling
In a mixing bowl, crumble the feta cheese and add the sautéed spinach mixture. Stir in 1 beaten egg, salt, black pepper, and nutmeg until well combined.

Prepare the Phyllo Sheets
Preheat the oven to 180°C (350°F). Melt the butter in a small saucepan. Lay one sheet of phyllo pastry on a clean surface and brush it lightly with melted butter. Layer another sheet on top and brush again.

Repeat the Process
Repeat the layering and filling process with the remaining phyllo sheets and filling, placing each rolled spanakopita on a baking sheet lined with parchment paper.

Remove from the oven and allow to cool for a few minutes before serving. Enjoy your homemade spanakopita warm!
