Wash the Russet potatoes thoroughly and peel them if desired. Cut them into thin strips or wedges, approximately 1/4 inch thick.

Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch, which helps achieve extra crispiness.

In a large mixing bowl, combine the dried oregano, garlic powder, paprika, salt, and black pepper. Add the dried potatoes to the bowl and drizzle with olive oil. Toss until the potatoes are evenly coated with the seasoning and oil.
