Method

For the Pork

  1. 1

    Prepare the Marinade

In a small bowl, combine olive oil, paprika, garlic powder, onion powder, salt, black pepper, cumin, oregano, and lemon juice. Mix well.

  2. 2

    Marinate the Pork

Rub the marinade all over the pork shoulder, ensuring it is evenly coated. Cover and refrigerate for at least 2 hours, preferably overnight for best flavor.

  3. 3

    Cook the Pork

Preheat your rotisserie grill or oven to 300°F (150°C). If using a rotisserie, secure the pork shoulder on the spit. Cook for about 3-4 hours, or until the internal temperature reaches 195°F (90°C). If using an oven, place the pork in a roasting pan and cover with foil, cooking for the same amount of time.

  4. 4

    Rest and Slice the Pork

Once cooked, remove the pork from the heat and let it rest for 15-20 minutes. Slice thinly for serving.

For the Tzatziki Sauce

  1. 5

    Prepare the Cucumber

Grate the cucumber and squeeze out excess moisture using a clean cloth or paper towel.

  2. 6

    Mix the Sauce

In a bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, salt, olive oil, and lemon juice. Stir until well combined. Refrigerate until ready to serve.

For Serving

  1. 7

    Assemble the Gyros

Warm the pita bread either in a toaster oven or directly on the grill for a few minutes. Layer sliced pork, tzatziki sauce, tomato slices, red onion, and shredded lettuce on each pita.

  2. 8

    Serve

Fold the pita over to enclose the filling and enjoy your delicious Rotisserie Pork Gyro!
