Method

Marinade Preparation

  1. 1

    Combine Ingredients

In a large bowl, combine the olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Whisk together until well blended.

  2. 2

    Marinate Pork

Cut the pork tenderloin into 1-inch cubes and add them to the marinade. Ensure the pork is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to overnight for more flavor.

Vegetable Preparation

  1. 3

    Prepare Vegetables

While the pork is marinating, wash and chop the bell peppers and red onion into 1-inch pieces. Set aside.

Assembly

  1. 4

    Soak Skewers

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

  2. 5

    Skewer Ingredients

Remove the marinated pork from the refrigerator. Thread the pork cubes, bell peppers, and red onion onto the skewers, alternating between meat and vegetables.

Cooking

  1. 6

    Preheat Grill

Preheat your grill to medium-high heat.

  2. 7

    Grill Skewers

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the pork is fully cooked and has nice grill marks.

Serving

  1. 8

    Serve

Remove the skewers from the grill and let them rest for a few minutes. Serve hot with your choice of dipping sauce or tzatziki.
