    Infuse the Base

    In a large glass jar, combine the ouzo and water. Stir gently to mix.

    Add Flavorings

    Add the anise seeds, fennel seeds, and masticha (if using) into the jar. Seal the jar tightly.

    Let it Steep

    Allow the mixture to steep in a cool, dark place for at least 48 hours to let the flavors meld.

Sweetening and Serving

    Sweeten the Ouzo

    After steeping, open the jar and add the sugar. Stir until the sugar is completely dissolved.

    Bottle the Ouzo

    Using a fine mesh strainer, strain the mixture into clean bottles to remove the solid ingredients.

    Chill and Serve

    Refrigerate the ouzo for a few hours before serving. Serve chilled in small glasses, optionally with ice.
