    Prepare the Vegetables

    Slice the eggplants and potatoes into thin rounds. Sprinkle with salt and let them sit for about 30 minutes to draw out moisture. Rinse and pat dry.

    Cook the Meat

    In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until soft. Add ground meat, cook until browned. Stir in tomato paste, oregano, cinnamon, salt, and pepper. Cook for 10 minutes, then set aside.

    Layer the Vegetables

    In a large baking dish, layer half of the potato slices at the bottom, followed by half of the eggplant slices. Spread half of the meat mixture on top. Repeat the layers.

    Make Béchamel Sauce

    In a saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes. Gradually whisk in milk until smooth. Cook until thickened. Remove from heat, stir in egg, nutmeg, salt, and pepper.

    Top and Bake

    Pour béchamel sauce over the layered vegetables and meat. Bake in a preheated oven at 180°C (350°F) for 45-50 minutes until golden on top.

Serving

    Let it Cool

    Remove from oven and let it cool for 15 minutes before slicing. Serve warm.
