    In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Whisk together until well blended.

    Add the cubed lamb to the marinade. Cover and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to penetrate the meat.

Skewering and Grilling

    Prepare the Skewers

    If using wooden skewers, soak them in water for 30 minutes to prevent burning. This step is not necessary for metal skewers.

    Remove the lamb from the marinade and thread the meat onto the skewers, leaving a little space between each piece for even cooking.

    Grill the Souvlaki

    Preheat the grill to medium-high heat. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the lamb is nicely charred and cooked to your desired doneness.
