Method

Preparation of Nut Filling

    Combine Nut Filling Ingredients

    In a mixing bowl, combine the chopped walnuts, chopped almonds, ground cinnamon, and granulated sugar. Mix well and set aside.

Assembly

    Prepare Filo Pastry

    Preheat your oven to 350°F (175°C). Melt the unsalted butter in a small saucepan. Brush a 9x13 inch baking dish with some of the melted butter.

    Layer Filo Pastry

    Place one sheet of filo pastry in the baking dish and brush it with melted butter. Repeat this process, layering 8 sheets of filo, brushing each with butter.

    Add Nut Filling

    Spread half of the nut filling mixture evenly over the layered filo. Add another 4 layers of filo, each brushed with butter. Then, add the remaining nut filling and top with the final 4 layers of filo, brushing each with butter.

    Cut the Baklava

    Using a sharp knife, cut the assembled baklava into diamond or square shapes.

Baking

    Bake the Baklava

    Bake in the preheated oven for about 45 to 50 minutes, until the baklava is golden brown and crispy.

Prepare Honey Syrup

    Make Honey Syrup

    While the baklava is baking, combine granulated sugar and water in a saucepan. Bring to a boil and then reduce heat to a simmer. Stir in honey and vanilla extract. Allow to simmer for about 10 minutes, then remove from heat.

    Soak the Baklava

    Once the baklava is done baking, remove it from the oven and immediately pour the hot honey syrup over the hot baklava. Allow to cool completely.
