Prepare the Pork Chops

Season the pork chops with salt and black pepper on both sides.

Sear the Pork Chops

In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for 4-5 minutes on each side until golden brown. Remove and set aside.

Make the Dijon Cream Sauce

In the same skillet, add minced garlic and sauté for 1 minute. Stir in Dijon mustard and heavy cream, mixing well. Bring to a simmer and cook for another 3-4 minutes until slightly thickened.

Finish Cooking the Pork Chops

Return the pork chops to the skillet, spooning the sauce over them. Cook for an additional 5-7 minutes, until the internal temperature reaches 145°F (63°C).

Prepare the Mashed Potatoes

While the pork chops are cooking, peel and dice the potatoes. Boil in salted water until tender, about 15-20 minutes. Drain and mash with butter and milk until smooth.

Cook the Vegetables

In a separate pot, steam or boil the mixed vegetables for 5-7 minutes until tender. Season with salt and pepper to taste.

Serve

Plate the pork chops with Dijon cream sauce alongside the mashed potatoes and mixed vegetables. Enjoy!
