Cooking Instructions

1

Prepare the Chicken

Season the organic chicken breasts with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.

2

Make the Sauce

In the same skillet, add minced garlic and chopped shallots. Sauté for 2 minutes until fragrant. Pour in the white wine and bring to a simmer, scraping up any browned bits from the bottom of the pan. Add lemon juice and capers, and let it simmer for another 3-4 minutes.

3

Finish the Dish

Add the veal demi to the sauce, stirring to combine. Return the chicken to the skillet, coating it in the sauce. Cook for an additional 2-3 minutes until warmed through.

4

Serve

Serve the chicken piccata over a bed of mashed potatoes, drizzled with the sauce. Add steamed seasonal veggies on the side.
