Prepare the Burger Patties

In a bowl, season the ground brisket with salt and black pepper. Form the mixture into two equal patties.

Cook the Patties

Heat a skillet or grill pan over medium-high heat. Cook the burger patties for about 4-5 minutes on each side for medium doneness, or until they reach your desired level of doneness.

Sauté the Mushrooms

In a separate pan, heat the olive oil over medium heat. Add the sliced mushrooms and sauté until they are golden brown and tender, about 5-7 minutes. Season with salt and pepper to taste.

Melt the Cheese

During the last minute of cooking the burger, place a slice of Swiss cheese on top of each patty and cover the skillet to allow the cheese to melt.

Assemble the Burger

Place each patty on a burger bun and top with sautéed mushrooms. Serve immediately.
