Prepare the crust

Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted unsalted butter, and salt. Mix until combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 8 minutes, then remove from the oven and let cool.

Make the filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and mix until well combined. Add sour cream and vanilla extract, and mix until smooth. Beat in the eggs one at a time, mixing on low speed until just combined.

Pour the cream cheese mixture over the cooled crust. Spread it evenly. Bake for about 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and crack the door open, letting the cheesecake cool in the oven for 1 hour.

Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight. Once chilled, run a knife around the edges before removing the springform pan. Slice and serve.
