Carnitas Preparation

Prepare the Pork

Rub the pork shoulder with salt, black pepper, cumin, garlic powder, onion powder, and chili powder. Let it marinate for at least 2 hours, or overnight in the refrigerator for best results.

Smoke the Pork

Preheat your smoker to 225°F (107°C). Place the marinated pork shoulder in the smoker and smoke for about 6-8 hours, or until the internal temperature reaches 195°F (90°C).

Prepare the Cabbage Slaw

In a large bowl, combine the shredded cabbage, shredded carrots, lime juice, salt, and pepper. Toss well and set aside.

Make the Chili Aioli

In a small bowl, mix together mayonnaise and chili sauce until well combined. Adjust seasoning with salt and pepper to taste.

Assemble the Tacos

Once the pork is done, shred it using two forks. Warm the tortillas in a skillet or microwave. Fill each tortilla with shredded pork, top with cabbage slaw, chili aioli, pickled red onions, crumbled Cojita cheese, and pico de gallo.
