1. Prepare the Apples

Wash the apples thoroughly and cut them into quarters, leaving the skins on. Remove any seeds.

2. Combine Ingredients

In a large pot, combine the quartered apples and water. Bring to a boil over medium-high heat.

3. Simmer

Reduce the heat to low and simmer for about 1 hour, stirring occasionally until the apples are soft and mushy.

4. Mash the Apples

Use a potato masher to mash the apples to release their juice. Continue to simmer for an additional 30 minutes.

5. Strain the Mixture

Place a fine-mesh strainer or cheesecloth over a large bowl and carefully pour the apple mixture through it to separate the liquid from the solids.

6. Add Sweeteners and Spices

Return the strained liquid to the pot. Add brown sugar, cinnamon sticks, cloves, nutmeg, lemon juice, and vanilla extract. Stir well.
