Prepare the Herb Compound Butter

In a small bowl, mix the softened butter with the chopped fresh herbs, salt, and pepper. Set aside.

Cook the Mashed Potatoes

Peel and chop the potatoes into quarters. Boil in salted water until fork-tender, about 15-20 minutes. Drain and mash with a little butter, salt, and pepper to taste.

Cook the Ribeye Steak

Preheat a skillet over medium-high heat and add olive oil. Season the ribeye with salt and pepper on both sides. Sear the steak for about 4-5 minutes per side for medium-rare, or until the desired doneness is reached. Let it rest for a few minutes.

Sauté the Vegetables

In the same skillet used for the steak, add a little more olive oil if needed and toss in the mixed vegetables. Sauté for about 5-7 minutes until tender and slightly caramelized. Season with salt and pepper.

Serve

Plate the mashed potatoes, top with a slice of herb compound butter, serve the ribeye on the side, and add the sautéed vegetables. Enjoy!
