Preparing the Omelette

Heat the Skillet
In a large skillet over medium heat, add the olive oil.

Cook Bacon
Add the diced bacon to the skillet and cook until crispy, about 5-7 minutes. Remove bacon and set aside.

Set Omelette
Once the edges start to set, gently lift them with a spatula and let the uncooked eggs flow underneath.

Add Fillings
Sprinkle the cooked bacon, diced ham, and shredded cheddar cheese on one half of the omelette.

Fold Omelette
When the eggs are fully set but still slightly soft, fold the omelette in half over the fillings and let cook for another minute.

Serve Omelette
Remove the omelette from the skillet and place it on a serving plate.
Making the Sausage Gravy

Cook Sausage
In a separate saucepan over medium heat, cook the ground sausage until browned, about 5-7 minutes.

Sprinkle the flour over the sausage and stir to combine, cooking for an additional 2 minutes.

Make Gravy
Gradually pour in the milk while stirring continuously to avoid lumps. Cook until the gravy thickens, about 3-5 minutes.

Season the gravy with salt and black pepper to taste.

Pour the sausage gravy generously over the omelette before serving.
