    Prep the Vegetables

    Slice the bell peppers and onion into thin strips. Set aside.

    Season the Beef

    In a bowl, combine the thinly sliced beef with salt, black pepper, and garlic powder. Mix well to ensure the beef is evenly coated with the seasonings.

Cooking

    Cook the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and bell peppers. Sauté for about 5-7 minutes, or until the vegetables are softened and slightly caramelized. Remove from the skillet and set aside.

    Cook the Beef

    In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Add the seasoned thinly sliced beef in a single layer. Cook for about 2-3 minutes on each side, or until the beef is browned and cooked through.

    Combine and Add Cheese

    Once the beef is cooked, reduce the heat to low. Add the sautéed onions and peppers back to the skillet with the beef. Pour the nacho cheese over the mixture and stir until everything is well combined and heated through.

    Serve the steak and cheddar mixture hot, either in a bowl or on a plate. It pairs well with tortilla chips, in a burrito, or on a toasted bun.
