    Prepare the Ingredients

    Preheat your oven to 350°F (175°C). Drain and chop the artichoke hearts and water chestnuts. Mince the garlic and dice the red bell pepper.

    Sauté the Vegetables

    In a large skillet over medium heat, add a splash of oil and sauté the minced garlic and diced red bell pepper until soft, about 3-4 minutes.

    Combine the Dip Ingredients

    In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix until smooth. Then add in the sautéed garlic and red bell pepper, chopped spinach, artichoke hearts, water chestnuts, mozzarella cheese, cheddar cheese, Parmesan cheese, salt, and pepper. Stir until well combined.

    Transfer to Baking Dish

    Transfer the mixture into a greased baking dish and spread it evenly.

    Bake the Dip

    Bake in the preheated oven for 25-30 minutes, or until the dip is bubbly and golden on top.

    Serve

    Remove from the oven and let it cool slightly before serving. Serve warm with tortilla chips.

Tortilla Chips Directions

    Prepare the Oil

    In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of tortilla; it should sizzle and rise to the surface.

    Fry the Tortillas

    Cut the corn tortillas into triangles. Carefully place a handful of triangles into the hot oil and fry for 2-3 minutes or until golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the chips from the oil and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with salt to taste.

    Repeat

    Repeat the frying process with the remaining tortilla triangles until all are cooked.

    Serve with Dip

    Serve the freshly made tortilla chips alongside the warm spinach and artichoke dip.
