Preparation

    Prepare the Okra

    Wash the fresh okra thoroughly under cold water. Trim the ends and slice them into 1/2-inch thick rounds.

    Prepare the Breading

    In a large bowl, mix together the cornmeal, all-purpose flour, salt, black pepper, paprika, and garlic powder until well combined.

Battering

    Coat the Okra

    Dip the sliced okra in buttermilk until fully coated, then transfer to the cornmeal mixture. Toss to coat the okra evenly with the breading.

Frying

    Heat the Oil

    In a large, heavy skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of breading into the oil; it should sizzle immediately.

    Fry the Okra

    Carefully add the breaded okra to the hot oil in batches, making sure not to overcrowd the skillet. Fry for about 3-4 minutes or until golden brown and crispy, turning occasionally.

    Drain and Season

    Remove the fried okra with a slotted spoon and place on a paper towel-lined plate to drain excess oil. Sprinkle with additional salt if desired.
