Fries Preparation

    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into thin shoestring fries.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the fries in batches, frying until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels. Season with salt.

Nacho Cheese Sauce Preparation

    Make the Cheese Sauce

    In a saucepan, combine the cheddar cheese, milk, cream cheese, nacho cheese seasoning mix, and paprika. Cook over medium heat, stirring constantly until the cheese is melted and the mixture is smooth.

    Add Jalapeños (optional)

    If using, stir in the jalapeños to the cheese sauce for an extra kick.

Assembly

    Assemble the Dish

    On a serving plate, layer the hot fries. Drizzle with the nacho cheese sauce. Top with crumbled cooked bacon, dollops of sour cream, and finely chopped green onions.
