Prepare the Dough
In a large bowl, combine warm water, brown sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until frothy.

Mix the Dry Ingredients
In another bowl, whisk together all-purpose flour and salt. Slowly add the flour mixture to the yeast mixture, mixing until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let the Dough Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Shape the Pretzel Bites
Once risen, preheat the oven to 450°F (230°C). Punch down the dough and divide it into small pieces (about 1 inch each). Roll each piece into a ball.

Prepare the Baking Soda Bath
In a large pot, bring 10 cups of water to a boil. Add the baking soda carefully.

Boil the Pretzel Bites
Boil the pretzel bites in batches for about 30 seconds each, then remove and place on a parchment-lined baking sheet.

Combine Ingredients
In a large mixing bowl, combine the shredded sharp cheddar cheese, softened cream cheese, garlic powder, mustard, beer, hot sauce, black pepper, and paprika.

Mix Until Smooth
Using an electric mixer or a food processor, blend the ingredients until smooth and creamy. If too thick, add a little more beer until the desired consistency is reached.

Transfer the pub cheese to a serving bowl. Serve with the warm pretzel bites.
