Vegan Meatballs

    Prepare Flaxseed Mixture

    In a small bowl, mix the ground flaxseed with water. Let it sit for about 5 minutes until it thickens.

    Mash Chickpeas

    In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Combine Ingredients

    Add the oats, thickened flaxseed mixture, garlic powder, onion powder, Italian seasoning, salt, black pepper, and olive oil to the mashed chickpeas. Mix until all ingredients are well combined.

    Shape Meatballs

    Preheat your oven to 375°F (190°C). Scoop out portions of the mixture and roll them into balls roughly the size of a golf ball. Place them on a baking sheet lined with parchment paper.

    Bake Meatballs

    Bake the meatballs in the preheated oven for 25-30 minutes, turning halfway through, until they are golden brown and firm.

    Heat Marinara Sauce

    In a saucepan over medium heat, warm the marinara sauce until it’s heated through, stirring occasionally.

    Assemble Sub

    Slice the sub rolls open and layer a generous amount of marinara sauce on the bottom. Add 3-4 meatballs on top of the sauce.

    Add Cheese and Basil

    Sprinkle vegan mozzarella cheese over the meatballs and add fresh basil leaves. Optionally, drizzle with a little more marinara sauce.

    Finish and Serve

    Place the assembled subs under a broiler for 2-3 minutes until the cheese is melted and bubbly. Serve immediately.
