Prepare Cheese Mixture

    Mix the Cheeses

    In a mixing bowl, combine the sharp cheddar, swiss, smoked gouda, and cream cheese. Mix until smooth and well incorporated.

    Add Seasoning

    Add garlic powder, onion powder, black pepper, and salt to the cheese mixture. Stir until all ingredients are evenly distributed.

Cook Bacon

    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove from the skillet and place on paper towels to drain excess fat.

Assemble Sandwiches

    Spread Cheese Mixture

    Take two slices of sourdough bread and spread a generous amount of the cheese mixture on each slice.

    Add Bacon

    Crumble the crispy bacon and sprinkle it over one slice of cheese-covered bread. Top with the other slice of bread, cheese side down.

Grill Sandwiches

    Butter the Bread

    Spread unsalted butter on the outside of both slices of the sandwich.

    Grill the Sandwich

    Heat a skillet over medium heat and place the sandwich in the skillet. Grill until golden brown and the cheese is melted, about 3-4 minutes on each side.

Serve

    Cut and Serve

    Once grilled, remove the sandwich from the skillet, cut in half, and serve with your choice of seasoned fries, chips, or a cup of tomato bisque.
