Peel and Dice Sweet Potatoes
Peel the sweet potatoes and cut them into 1-inch cubes. Set aside.

Chop Onion
Peel and finely chop the red onion. Set aside.

Mince Garlic
Peel and mince the garlic cloves. Set aside.

Chop Parsley
Wash and finely chop the fresh parsley. Set aside.
Cooking

Cook Sweet Potatoes
In a large pot, add the diced sweet potatoes and cover them with water. Bring to a boil and cook for about 15 minutes or until tender. Drain and set aside.

Sauté Onion and Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add the minced garlic and sauté for another 1-2 minutes until fragrant.

Combine Ingredients
Add the cooked sweet potatoes to the skillet with the onion and garlic. Stir gently to combine, ensuring the sweet potatoes are coated with the oil and seasonings.

Add the chopped parsley, salt, and black pepper to the skillet. Toss everything together gently. Finally, sprinkle the feta cheese over the salad. Serve warm.
