    Chop the Vegetables

    Dice the onion and bell peppers into small pieces. Chop the tomato and set aside. Rinse the spinach and pat dry.

Cooking

    Sauté the Vegetables

    In a medium skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers, and sauté for about 5 minutes until they are soft and translucent.

    Add Spinach and Tomatoes

    Stir in the spinach and chopped tomatoes, cooking for an additional 2-3 minutes until the spinach is wilted and the tomatoes are slightly softened. Season with salt and black pepper.

    Prepare the Eggs

    In a bowl, crack the eggs and whisk them until fully combined. Pour the egg mixture over the sautéed vegetables in the skillet.

    Cook the Omelette

    Allow the eggs to cook undisturbed for about 3-4 minutes until the edges start to set. You can gently lift the edges with a spatula to let uncooked egg flow underneath.

    Finish Cooking

    Once the omelette is cooked through but still slightly soft in the center, carefully fold it in half. Cook for an additional 1-2 minutes if you prefer a firmer texture.
